"The security requirements of a restaurant are obviously different to those of a nightclub," says Bernard page, director of Soundsec security firm, which specialises in providing security for restaurants. "In high-profile restaurants and bars you are dealing with a more discerning clientele. You cannot get away with old school, thuggish doormen. Our door supervisors need to be adaptable and diplomatic. They need excellent people skills as well as the ability to deal effectively with physical confrontation. We also demand immaculate presentation and manners, to reflect the image of the establishments we represent. We have had to scrutinise our employees very closely and become much more aware of matching the correct supervisor to the needs of our indivdual clients."
